Job Description

Salary: £27,494 Plus up to £6000 Market Sector Allowance may be available for exceptional and experienced candidates.

Background

The House of Lords Catering and Retail Services Department provides catering facilities to Lords Members, their guests, Staff of the House and visitors.  It also provides a private function service to Lords Members of the House and sells House of Lords’ gifts and souvenirs in the Gift Shop. 

The House of Lords Catering and Retail Services Department are seeking to recruit experienced Sous Chef who can deliver high levels of creativity, production, and service to a wide variety of outlets. Your passionate will shine through the dishes you create.

The Role

Operationally, you will lead a team and manage every aspect of service delivery in one of our outlets being a cafeteria, formal dining, private dining, and banqueting services. You will manage a busy, pressured, and demanding environment whilst demonstrating tight financial controls supporting the Department’s commitment to reduce costs, improve commercial viability and to promote a proficient and responsive hospitality service maintaining the highest levels of customer service. 

As a member of the kitchen operational team, you will have an essential role in achieving CRS strategic objectives and developing a team full of ambitions for the future on behalf of the Administration, the House and patrons

The Person

The successful candidate will have the following skills/experience:

- Experience - You have proven and relevant experience of being accountable within the industry for the delivery of a high standard of formal dining, private dining, banqueting and cafeteria services whilst demonstrating financial controls and value for money.

- Professional and Innovative - A professional, innovative and creative chef with the skills and fortitude to tackle the range of challenges. To be an inspirational section leader with proven experience of creating and leading a disciplined, resilient, and skilful team of chefs for the variety of service style requirements required in the House of Lords.

- Knowledge of Food Costs and Menus - Have a great knowledge of food costs and have a good understanding of food GP% and costing techniques so that profit margins are met. To design, plan and cost menu’s using a great knowledge of food seasons, food trends and food pairing.

- Planning and Organisation Skills - Producing and planning rota’s that ensure the correct staffing levels are used to cover business needs within set budgets keeping extra hours to a minimum.
